The varieties for the Boutique range were sourced from premium wine growing regions such as Murrumbateman, Hilltops and Tumbarumba and include Riesling, Chardonnay, Shiraz, Nebbiolo and Tempranillo. These varieties were chosen because of their excellent suitability to their regions. For example, Riesling and Shiraz perform exceptionally well in the Canberra District And likewise Chardonnay in Tumbarumba. New varieties will be added from time to time so keep an eye out in the store.
The state of the art equipment in the recently refurbished boutique winery, combined with some careful wine making, have enabled the production of wines which are complex but still retain the fruit characteristics typical of the respective regional styles.
Grapes have been sourced from growers who have a strong connection to the University, including a Tumbarumba grower who has been supplying CSU for more than 25 years.
