This fizzy style was the earliest version of sparkling wine and is also called the ancestral method. Our pet nat is not riddled or disgorged so there is a little sediment in the bottle, kinda like a cloudy cider.
The rosé version is made from Shiraz, Nebbiolo and Sauvignon Blanc from various regions in NSW.
Maturation: a few months in bottle
Fining: None, NO added Sulfur!
